Soup on Sunday on Monday

Still trying to decide if I'm going to move it to another day or just have more than one post on Sunday. Will have a few posts today anyway.

Today's Soup on Sunday on Monday is:
New England Clam Chowder(From Taste of Home's Heartwarming Soups)
4 medium potatoes, peeled and cubed
2 medium onions, chopped
1/2 cup butter
3/4 cup all-purpose flour
2 quarts(4 cups) milk
3 cans(6 1/2 oz each) chopped clams, undrained
2 to 3 tsp salt
1 tsp rubbed sage
1 tsp ground thyme
1/2 tsp celery salt
1/2 tsp pepper

Place potatoes in a saucepan and cover with water, bring to a boil. Cover and cook until tender.

In soup pot saute onions in butter until tender. Add flour; mix until smooth. Stir in milk. Cook over medium heat, stirring constantly, until thickened and bubbly. Drain potatoes; add to soup pot. Add clams and remaining ingredients; heat through.

I know some are afraid of milk on the stove, but as long as you stay near the pot and stir often there should be no problem. This is one of my family's favorite soups in the winter and I'm pretty sure it will be on our menu this week since it's looking to be a chilly week.
